Aubergine Lasagne!

It’s almost Dinner Time!

This is the perfect time to cook something light but tasty. What about Aubergine Lasagne?

Preparation time: 15 min | Cooking Time: 50 min | Calories: 400

Ingredients:

  • 1 Aubergine
  • 1 Onion
  • 100g Mince
  • 2 Tbsp Tomato Passata
  • 50 g Mozzarella Cheese
  • 20g Parmesan Cheese
  • 2 Tbsp Besciamelle Sauce
  • Salt
  • Olive Oil

Preparation:

Firstly, slice the aubergine up into 1cm thick slices, and put to one side. Then, chop the onion and fry it with 1tbsp of Olive Oil. After 2 mins add the mince, stir it and cook it for 10 mins.

Secondly, get an earthenware-type dish. On the bottom, put a single layer of aubergine, followed by a layer of mince and mozzarella cheese. Repeat these layers until you have used all the aubergines. Finish spreading the Besciamelle Sauce and Parmesan cheese on the top.

Put it in the oven and bake it at 200° for 40 min.
