Healthy Lunch? Super-quick Salad!

Are you always thinking about what to bring in the office for lunch? Why don’t you try my healthy salad?

This is a tasty and super quick option to your sandwiches!

  • 70g Rocket
  • 1 Sweet Potato
  • 100g Tofu
  • 80g Black Beans
  • Olive Oil
  • Balsamic Vinegar
  • Salt
  • Soy Sauce
  • Curry Powder
  • Chili


Firstly, wash a sweet potato and put it in the microwave for 6 minutes.

Secondly, cut the tofu into small rectangles and fry them in a pan with a Tsp of olive oil. After 2 min, add a Tbsp of soy sauce and stir the tofu until it turns into a brown colour.

Once the tofu is ready, put it in a bowl and use the pan where you fried it, to cook 80g of black beans, with 1 tsp of curry powder and 1 small red chili; stir the beans for 3 mins.

Then, put your already washed rocket in a bowl, and add the tofu and beans.

Finally, once your sweet potato is cooked, peel it and chop it in small rectangles, which you will add into the bowl.

Dress the salad with a bit of salt, balsamic vinegar, and olive oil.
